V-shaped models have a slightly reduced cooking area due to the grease tray. Round models, on the other hand, offer an optional interchangeable griddle—great for varied cooking techniques. Note: these griddles are not compatible with V-shaped models due to the built-in incline for grease flow (~3°).
The brazier is essential for igniting the fire and producing uniform embers with ease. It supports charcoal, dry wood, or a combination of both. For optimal results, always use dry wood and, for charcoal, we recommend large chunks of white quebracho.
Why it matters: Cooking with partially ignited charcoal releases unwanted gases that can affect both flavor and digestion. Only begin cooking once the embers are fully formed.

Specially developed to facilitate slow-cooking low-temperature, slow cooking over extended periods, it’s perfect for large cuts like flank steak, whole ribeye, or even whole animals such as pork, chicken, goat, or lamb.
Its unique rotation system allows us to move it freely, keeping us away from the high temperatures of the brazier.
