1 - Season the picanha with salt on both sides
before taking to the grill. Go heavier with the salt
on the fatty side.
2 - Cook it on the main grill, fat side first, on low
heat for about 45 minutes - 1 hour. Tip: to check
if temperature is OK, you must be able to hover
your hand on the grill for about 8-9 seconds.
3 - Flip the picanha and cook it on the meat side
for about 30-40 minutes.
4 - Set aside and let it rest on the warming rack
for about 20 minutes before serving.
5 - Serve with a good wine and enjoy!
