A Santa Maria grill is an open-fire barbecue system built around a height-adjustable cooking grate operated by a hand crank. The cook can control heat intensity by raising or lowering the grate above a fire. You can achieve this without vents, dampers, or electronics. The result is clean, direct heat, pronounced wood character, and a highly tactile style of cooking that rewards attention and craft.

A Santa Maria grill controls heat by distance, not airflow. Lower the grate for intense radiant heat and searing; raise it to reduce heat and finish gently. One turn of the wheel equals immediate temperature adjustment.

The lift system multiplies control and stability. It allows precise, one-handed height changes, even with a fully loaded grate, while built-in locking systems hold position safely.

A brasero is a dedicated firebox — usually mounted to the side or rear of the hearth (where wood or lump charcoal is burned to produce glowing embers). Those embers are then staged and moved under the cooking grate to create controlled zones of radiant heat.

The best type of charcoal for grilling is not just “lump charcoal” in general, but more specifically white quebracho or red quebracho when you want long burn time, steady heat, and better fire control.

Choosing between a charcoal grill and a gas grill often gets framed as convenience versus tradition. That’s not wrong, but it’s incomplete. If your priority is the quality of the cook (aroma, sear, smoke interaction, live-fire control, and the overall ritual), charcoal consistently delivers a deeper grilling experience. Gas has strengths, mainly speed and predictability, but when people say “this tastes like real barbecue,” they are usually describing what charcoal and live open fire do naturally.

The system can be configured with either a right-side elevation or front elevation layout, allowing flexibility in design, accessibility, and workflow requirements. Both configurations provide the same functionality while adapting to different installation preferences and operational needs. The front elevation system features an internal locking mechanism that automatically holds the grate position whenever wheel rotation stops, providing precise control and added convenience. The right-side elevation system, on the other hand, utilizes a manual locking system, allowing the operator to secure the grate at the desired height as needed.

V-shaped or round main grates—it’s just a matter of preference. Both provide excellent grilling performance, so the choice ultimately comes down to the cooking style and grilling experience you prefer.

The drain system helps water flow out of the grill when needed, preventing moisture from accumulating inside the firebox and around the firebricks. By allowing proper drainage, it reduces the risk of mold, mildew, and unwanted buildup that can develop when water is trapped for extended periods. This feature helps keep the interior cleaner, protects the integrity of the firebricks, and contributes to the long-term durability and performance of the grill, especially in outdoor environments exposed to rain, humidity, or frequent cleaning.

Our SI models, like any grills made from cold-rolled steel, are prone to rusting, especially in areas exposed to the highest heat, such as the firebox. This issue is more common in regions with high humidity.
Due to the nature of this material, the BBQ may develop:
Surface rust (oxidation)
Heat discoloration
Patina over time
These are natural and expected characteristics, not defects, and do not affect the performance or structural integrity of the grill.
To help preserve the grill, we recommend periodically sanding affected areas with fine sandpaper and applying a high-temperature, rust-preventive paint.
Please note: Surface rust, oxidation, discoloration from heat, and normal wear are not covered under warranty, as they are inherent to the material and use conditions.

304 stainless steel is generally known for its corrosion resistance, but it is not entirely immune to rust. Exposure to certain conditions can still lead to rusting. Factors that may contribute to rust on 304 stainless steel include:
Chloride exposure: Salt and other chlorides may lead to pitting corrosion, especially in coastal or marine environments.
Harsh environments: Exposure to harsh chemicals, acids, or extreme environmental conditions may affect the material.
Scratches and surface damage: Scratches may expose the surface to corrosive elements.
Care Recommendations for 304 Stainless Steel
Clean periodically using mild detergents and a soft cloth or sponge.
Avoid exposure to harsh chemicals or acids, and clean the surface promptly if contact occurs.
Minimize chloride exposure, especially in coastal areas, by rinsing off salt deposits regularly.
When appropriate, use protective coatings suitable for stainless steel.
If rust becomes visible, possible removal methods include:
Mechanical cleaning using a nylon brush, abrasive pad, or sandpaper, always following the stainless steel grain.
Chemical cleaning using mild acids such as citric acid or vinegar, followed by thorough rinsing.
Commercial stainless steel cleaners intended for rust removal.
After rust removal, the stainless steel surface should be cleaned and passivated to help restore corrosion resistance. For all methods above, always consult a professional or qualified personnel to avoid damaging the product.
