The reliable approach is diagnostic: identify whether the problem is weak combustion, heat loss, an uneven draft, or an insufficient ember reserve. Then make one controlled adjustment at a time.
Start with the right diagnosis
Before touching the fire, inspect three signals: the embers, the smoke, and the cooking pattern across the grate. A strong bed should glow consistently and produce steady radiant heat without heavy smoke. Clean, faint smoke indicates a mature fire; thick smoke often points to damp fuel or newly added wood that has not fully ignited. If one side is cooking faster, wind or uneven ember distribution is more likely than cold air alone.

Food cooking slowly does not automatically mean the fire is failing. The surrounding environment may simply be removing heat from the grate and food faster than it did in warmer weather.
Build a larger ember reserve, not a chaotic fire
Winter cooking benefits from preparation. Start earlier and allow enough time to establish a deep bed of embers before the food goes on. Keep a separate fire producing replacement coals when the grill includes a firebox or brasero.
This does not mean piling fresh wood beneath the food. A large, smoky flame creates unstable heat and can deposit harsh flavors. Mature embers are the working fuel. Burning wood is the supply line that produces them.

Add replacement embers in smaller amounts and spread them where they are needed. A stronger zone can sit under the thickest part of a cut while a lighter zone protects thinner edges, vegetables, or food waiting to finish.
Use grate height before making big fuel changes
A height-adjustable grate is the fastest way to change how much radiant heat reaches the food without rebuilding the fire.
If the exterior is pale and the embers are healthy, lower the grate slightly. If the surface is darkening before the interior is ready, raise it. Make small changes and give the food time to respond. Constantly cranking the grate up and down creates a new variable before the previous adjustment can be evaluated.
Fuel changes affect the whole fire and take time. Grate-height changes affect the food immediately. Use the more precise tool first.
Treat wind as a separate problem
Wind can increase combustion on the exposed side, push smoke across the food, and accelerate heat loss from the cooking surface. Adding more fuel does not correct uneven airflow; it often creates a larger uneven fire.
Position the grill so prevailing wind does not cut directly across the firebox and grate. Use an appropriate wind barrier when needed, but never enclose the grill or compromise ventilation. Live-fire grills must remain outdoors, away from combustible surfaces and overhead structures, according to the model's installation guidance.
Keep fuel dry and ready
Cold weather is often blamed for problems caused by moisture. Damp wood is slower to ignite, produces more visible smoke, and makes ember production unpredictable. Store cooking wood and charcoal in a dry, protected location. Bring only the working amount near the grill and keep it safely away from heat and sparks.
Split logs of consistent size are easier to manage than a random mix of large and small pieces. Consistency in the fuel produces consistency in the ember supply.
Use a simple feedback loop
Every 10 to 15 minutes during a longer cook, check the same sequence:
- Ember condition: Are they bright, evenly distributed, and free of heavy smoke?
- Food response: Is the surface coloring at the expected rate?
- Wind and weather: Has direction, precipitation, or exposure changed?
- Grate distance: Can a small height adjustment solve the problem?
- Ember supply: Does one zone need reinforcement?
Change one variable, wait, and observe. Fire management becomes difficult when the cook changes the grate, adds wood, moves every piece of food, and alters airflow at the same time.
A cold-weather cooking checklist
- Use dry fuel intended for cooking.
- Start early enough to build a mature ember bed.
- Prepare replacement embers before the main bed fades.
- Establish at least two heat zones.
- Protect the grill from crosswinds without enclosing it.
- Light the work surface and surrounding path before sunset.
- Use a thermometer for thick cuts; weather makes cooking time less predictable.
- Follow the installation, clearance, and operating instructions for the specific grill.
The goal is predictability
Cold-weather fire management is not a contest to see how much fuel the grill can consume. It is a system for keeping ember production, heat transfer, and food response predictable as conditions change.
